Vegan Burrito Bowl with Spicy Black Beans & Guacamole

This vegan burrito bowl is loaded with protein, fiber, and flavor — without the dairy or processed sauces. It’s spicy, fresh, and easy to meal prep for lunch or dinner. Each bite has creamy guacamole, smoky beans, and crisp veggies that make clean eating taste amazing.

Ingredients

For the black beans:

1 can (400g) black beans, rinsed

1 tbsp olive oil

1 small onion, chopped

2 garlic cloves, minced

1 tsp cumin

1 tsp paprika

½ tsp chili powder

Salt to taste

For the bowl:

1 cup cooked brown rice or quinoa

½ cup corn

½ cup diced tomatoes

½ cup lettuce or spinach

½ avocado, mashed (for guacamole)

1 tbsp lime juice

Fresh cilantro for garnish

Instructions

In a pan, heat olive oil. Add onion and garlic, sauté until golden.

Add black beans, cumin, paprika, chili, and salt. Cook for 5–7 minutes.

For guacamole: mash avocado with lime juice and a pinch of salt.

In a bowl, layer rice, beans, corn, tomatoes, lettuce, and guacamole.

Top with cilantro and serve with lime wedges.
