Ingredients
200g firm tofu (crumbled)
1 tbsp olive oil
1/4 tsp turmeric powder
1/4 tsp black salt (kala namak) for that “eggy” flavor
1/4 cup chopped onion
1/2 cup diced bell peppers
1/4 cup spinach
Salt & pepper to taste
1 tbsp nutritional yeast (optional for cheesy flavor)
1/2 tsp garlic powder
Optional toppings: avocado slices, cherry tomatoes, or hot sauce.
Instructions
Press the tofu using a tofu press or paper towels to remove extra water.
In a pan, heat olive oil over medium flame. Add onion and bell peppers and sauté for 2-3 minutes.
Add crumbled tofu, turmeric, garlic powder, black salt, and pepper. Stir well.
Cook for 5-7 minutes until slightly golden.
Add spinach and nutritional yeast. Stir until spinach softens.
Serve warm with avocado slices and cherry tomatoes on top.
